In this country, coffee arrived from the West Indies around 1808. Columbia is the world's second largest producer of Arabica coffee after Brazil and the first in the world in the production of MILDS. Cultivation altitude: 800-1900 metres ASL. Harvesting season: from April to June (75%) and from October to January (25%). The best variety of Columbian coffee comes from Medellin and has a thick body, rich taste and medium acidity. Columbian coffee is classified as Supremo, Excelso Caracol and Maragogype. Supremo coffee has larger beans, while Excelso has an average sieving thickness and is softer and more acidic. Caracol has large and round beans, while Maragogype presents huge beans with an irregular shape. A medium-bodied aromatic coffee with a pleasant fruity taste. It has a typical aroma of flowers, with hints of honey, beeswax and cereal, which when released also give off hints of toasted bread. The scent of cocoa is enhanced by hints of dried fruit, especially almonds and walnuts, that give this coffee an attractive personality.
